Description
The beauty of breakfast is that it can be so wonderfully versatile. Sometimes there's the classic roll, sometimes muesli or even yoghurt. We have another idea for you: a breakfast in a little cake! To be more precise, we present you a vegan breakfast muffin. It's moist, aromatic and full of good ingredients. Once baked, you'll have a whole dozen. Perfect for several days or for the small hunger in between. How practical is that?

100 g carrot
200 g apple
100 g avocado
150 g apple puree
75 g sugar
100 g soy yoghurt
300 g spelt flour
3 Teaspoon(s) baking powder
1 Teaspoon(s) cinnamon, ground

  • Total time: 45 min

Bake the muffins

Preheat the oven to 170°C convection oven. Peel the carrot and grate it together with the apple.

Put all the ingredients in a mixing bowl and mix until smooth.

Divide the batter evenly between the cups of the muffin tin.

Bake the muffins for 30 minutes. If necessary, test them and adjust the baking time slightly.

Enjoy immediately or leave to cool and store in an airtight container for the next few days.
