Description
If you want to fuse Mediterranean cuisine with a burger, try this fluffy focaccia burger bun. The fresh herbs combined with the olive oil create a wonderful Mediterranean aroma that will make you fly south. The taste of the buns is already outstanding and harmonises perfectly with poultry, feta cheese and delicious vegetables. This is what a holiday tastes like!

410 g wheat flour
250 ml water, lukewarm
42 g yeast, fresh
1 Teaspoon(s) sugar
2 Teaspoon(s) salt
1 Tablespoon(s) rosmary, chopped
1 Tablespoon(s) thyme, chopped
20 ml olive oil

For 6 medium or 12 small buns

250 g wheat flour
150 ml water, lukewarm
25 g yeast, fresh
0.5 Teaspoon(s) sugar
1 Teaspoon(s) salt
2 Teaspoon(s) rosmary, chopped
2 Teaspoon(s) thyme, chopped
15 ml olive oil

Preparing the buns

Put the flour in a mixing bowl, form a hollow and crumble the yeast into it. Then add a pinch of sugar and water and let everything stand for about 15 minutes.

Add salt and some of the herbs and knead everything into a smooth dough. Let this rest covered for about 60 minutes.

Knead the dough well once and then cut out small balls. Place them slightly flattened in the mold and brush with olive oil. Let rise for about 60 minutes. Size L buns require about 110g of dough, for size M 70g of dough and size S buns 35g of dough.

Preheat the oven to 180°C convection oven. When the rolls have risen well, brush them again with olive oil and sprinkle with the remaining herbs. Then bake in the preheated oven for about 15 minutes (size L)/ 12 minutes (size M)/ 10 minutes (size S).
