French fries

Shimmering golden yellow, crispy and wonderfully tasty inside, that's how fries should be! You don't have to go shopping for these delicious potato sticks. Do you have some potatoes in the house? Then go for it - turn them into sticks that you can snack on with ketchup and mayo.

Ingredients for

1 kg potatoes, mainly waxy
2 l water
100 ml vinegar
10 g salt
2 l oil, for frying
spices to taste

Prepare the fries

Cut the potatoes into sticks with a dicer and pen cutter and put them in cold water for about an hour to wash out the starch a little.
Boil water with vinegar and salt and blanch/pre-cook the potato sticks in it for ten minutes. Then let them steam out a little on a kitchen towel.
Heat the oil or deep fryer to 170°C and deep fry the blanched potato sticks for 10 minutes. Then leave to cool
If possible, freeze the pre-fried potato sticks overnight (or longer). This step is not absolutely necessary, but ensures that the fries become a little softer on the inside.
Heat the deep fryer to 180°C and deep fry the potato sticks a second time for about 60 seconds until done. Then place them in a bowl and season to taste.
