For the dough

100 g butter
100 g sugar
150 g wheat flour
0.5 Teaspoon(s) baking powder
1 Pack(s) vanilla sugar
2 Tablespoon(s) milk
3 egg yolks

For the topping

150 g sugar
3 egg whites
350 g gooseberries

Preparation

Prepare the dough

Preheat the oven to 180° C top/bottom heat.

Separate the eggs. Knead the butter, sugar, flour, baking powder, vanilla sugar, milk and egg yolks into a dough. Then spread it evenly into the tin.

Bake the pastry in the preheated oven for 15 minutes.

Prepare the topping

Preheat the oven to 150 °C top/bottom heat.

Beat the egg whites with the sugar until stiff, adding the sugar gradually. Drain the gooseberries and top the pre-baked pastry with them. Then spread the beaten egg white mixture over the top.

Bake the cake for another 45 minutes. Then leave to rest for 5 minutes in the switched-off, closed oven.
