Description
Lemon curd is actually delicious enough on its own. You would love to spoon this lemony cream straight from the jar. If it weren't for this recipe, where lemon curd meets a juicy fruit base and crunchy nutty pistachios, that would be an argument. Ready to bake? For the biscuit base

2 eggs
6 Tablespoon(s) milk
6 Teaspoon(s) oil
100 g sugar
150 g wheat flour
2 Teaspoon(s) baking powder
0.5 Pack(s) lemon sugar

For the layering

200 g cream cheese
250 g lemon curd
0.5 Pack(s) lemon sugar
100 g pistachios, roasted and chopped

Preparation

  • Total time: 1 h 30 min

Bake the biscuit base

Preheat the oven to 180°C fan oven.

Beat the eggs, sugar and lemon sugar together.

Mix the milk and oil together with the flour and baking powder. Add both alternately to the egg and sugar mixture while stirring.

Pour the batter into the fruit base tin and bake for 15 minutes.

Then allow to cool briefly, turn out and allow to cool completely.

Prepare the layering

Mix the cream cheese with the lemon sugar until smooth and spread evenly over the sponge base, smoothing it out.

Pour the lemon curd onto the cream cheese and spread carefully (the cream cheese should not mix with the lemon curd!).

Decorate the cake with the chopped pistachios and serve.
