For the mashed potatoes

500 g potatoes, floury cooking
100 g butter
75 ml milk
salt, pepper, nutmeg to taste

Prepare the mashed potatoes

Cook the potatoes in their skins. Make sure that the potatoes are of a similar size and therefore have a similar cooking time.

Drain the cooked potatoes and let them steam briefly in a sieve. Peel them and heat the milk in a saucepan.

Press the potatoes into the warm milk and then add the butter in small cubes while stirring until it has completely combined with the puree. IMPORTANT: Do not use a whisk or blender, as the puree will become gluey and tough. Only work with a wooden spoon.

Season the puree with salt, pepper and nutmeg and serve immediately.
