150 ml water
150 g sugar
200 ml condensed milk, 10%
8 Leave(s) gelatine
370 g couverture, white
food colouring, to taste

Preparation

Prepare the mirror glaze

Bring the water, sugar and condensed milk to the boil for one minute. Soak the gelatine.

Chop the chocolate coating. Remove the condensed milk and sugar mixture from the heat, add the gelatine and pour over the chopped couverture. Wait for 3 minutes.

If necessary, add food colouring and stir gently until smooth. Avoid the formation of bubbles. If bubbles form, pass through a sieve (several times).

Allow the mixture to cool until it thickens.

Place the cake on a wire rack and pour the Mirrorglaze slowly and evenly over the cake. Repeat the process if necessary until you have the desired layer.

Note:
You always need more or enough mirrorglaze, as some of the mixture will run off the cake and you should not skimp on the mixture for a perfect result.
It is best to freeze the cake beforehand. The colder the surface, the quicker the icing will set.
