Mole cake

Description
For amateur gardeners, molehills are a real nuisance. The mole cake may look like a pile of thrown-up earth, but inside it hides a creamy filling of cream, vanilla and banana. This is encased in a dark chocolate sponge. So this molehill is a real cause for celebration. Especially for children's birthday parties.

For the dough

100 g butter
120 g sugar
1 vanilla pod
2 eggs
150 g wheat flour
30 g cocoa powder
1 Pinch(es) salt
75 ml milk

For the filling

600 ml cream, cold
3 Pack(s) cream stiffener
2 Tablespoon(s) vanilla sugar
70 g whole milk chocolate, grated
2 bananas

Preparation

Prepare the dough

Preheat the oven to 160°C top/bottom heat. Beat the butter and sugar until fluffy. Add the eggs one by one.

Fold in the flour, cocoa, baking powder, salt and vanilla pulp and stir in the milk until smooth.

Pour the dough onto a baking tray and bake for 20 minutes. After baking, allow to cool and press the hemisphere mould lightly onto the dough. Cut out the dough in a circle along the imprint.

Prepare the filling

Whip the cream with vanilla sugar and cream stiffener.

Crumble the rest of the cake mixture (outside the circle). Sprinkle some into the tin, press down lightly and pour a little cream on top so that it does not touch the tin. Sprinkle cake crumbs all around again, press down lightly again and top up again with a little cream to hold it in place. Repeat until you reach the top.

Peel and slice the banana and spread evenly over the cream.

Place the round pastry base on top and press down. Then chill for at least one hour.
