Plum tartlets

Description
It's plum time again! Harvest them yourself or buy a basket, wash them, pit them and think about what you can conjure up from this great fruit. You've already tried sheet cakes, mush and crumble. This year you need something new! How about our delicious tartlets? They are so tasty, handy and sweet that you just can't resist.

For the dough

5 Tablespoon(s) milk
2 eggs
5 Teaspoon(s) oil
80 g sugar
120 g wheat flour
2 Teaspoon(s) baking powder

For the topping

6 plums, big
6 Tablespoon(s) brown sugar
2 cl plum brandy (optional)
1 egg white
85 g icing sugar
0.5 Teaspoon(s) cinnamon
5 g cornflour

Preparation

  • Total time: 1 h

Prepare the pastry

Preheat the oven to 170°C convection oven.

Place all ingredients in a small mixing bowl and mix until smooth.

Pour the batter into the moulds and bake for 12 minutes.

After baking, turn out onto a wire rack to cool.

Finish the tartlets

Wash, pit and dice the plums.

Heat the sugar, caramelise slightly and add the damsons (and damson brandy). Stir until the sugar has dissolved and then leave to cool slightly.

Preheat the oven to 190°C convection oven.

Beat the egg whites until stiff and add the icing sugar, cinnamon and cornflour. Spread the plums on the tartlets and decorate with the cinnamon whipped cream.

Bake in the oven for 15 minutes.
