Description
A salty yeast dough and baking soda. That's right - with this recipe you can make homemade pretzels. As for the shape of the salty pastry, you are free to design it as you wish: small or large rolls or artfully twisted pretzels.

500 g wheat flour, type 550
42 g yeast, fresh
270 ml water, lukewarm
1 Teaspoon(s) salt
0.5 Teaspoon(s) sugar
50 g lard
3 Tablespoon(s) bicarbonate of soda
1 l water
100 g coarse sea salt

Preparation

Bake the pretzel rolls

Mix the flour, yeast, water, salt, sugar and lard and knead into a smooth dough.

Cover the dough and let it rise for one hour. Then knead again and divide into small dough pieces and shape as desired.

Bring water to the boil and add bicarbonate of soda (note: bicarbonate of soda foams up!). Put the dough pieces in with a slotted spoon, one at a time, for 30 seconds and then place on the baking mat.

Cut the dough crosswise or criss-cross with a sharp knife about half a cm deep, sprinkle with coarse sea salt and leave to rest for 30 minutes.

Preheat the oven to 200°C top/bottom heat.

Place the baking mat on a baking tray and bake the pretzels in the preheated oven on the middle shelf for 20 minutes until crispy brown.
