You probably also associate coconuts with summer. Pumpkins are definitely in season in autumn. But you could enjoy the pumpkin coconut snacks all year round. You don't need many ingredients. You can have several of these delicious breaded snacks ready in 30 minutes. They are perfect for a game or TV night and also make great finger food for your buffet.

1 butternut pumpkin
50 g coconut flakes
3 eggs
3 Tablespoon(s) wheat flour
100 g breadcrumbs

Prepare the pumpkin coconut sticks

Cut off the head of the butternut squash and peel it. Then cut into pencils with a dicer and pencil cutter. Cut wedges from the remaining pumpkin or make soup, for example.

Cook the pumpkin sticks in lightly salted water until firm to the bite and then rinse in cold water. Drain on a cloth.

Mix the coconut flakes with the breadcrumbs. Dust the pumpkin sticks with flour, run through beaten egg and roll in the coconut breadcrumbs.

Fry the breaded sticks in a pan or deep fryer until golden brown. Then drain on a paper towel and serve with dip or as a side dish.
