Description
Does onion and jam sound strange to you? At first glance, it's understandable, since onions have nothing to do with breakfast or sweet meals. But when you stew the onion a little, it develops an intense sweetness, which we then support with a little sugar, maple syrup and port wine. Onion marmalade is just as good as a topping on a burger as it is as a side dish with meat.

200 g red onions
20 g brown sugar
100 ml red wine
200 ml port wine, red
3 Tablespoon(s) balsamic vinegar, dark
1 Tablespoon(s) maple syrup
0.5 Teaspoon(s) salt
1 Pinch(es) cinnamon, ground
pepper to taste

Prepare the onion jam

Peel the onions and cut them into fine half rings. Meanwhile, put sugar in a saucepan with some water and heat.

When the sugar starts to brown, add the onions and sauté for a short time. Then add the red wine and let it reduce until it has a syrupy consistency. Then do the same with the port.

When the jam has reached a consistency that is slightly more liquid than honey, remove the pan from the heat and season with balsamic vinegar, maple syrup, salt and pepper and a pinch of cinnamon.
