Ingredients for the compote

400 g rhubarb
150 g strawberries
1 lime
80 g sugar
0.5 Teaspoon(s) vanilla (extract)
Tablespoon(s) cornstarch

Preparation

Prepare the compote

Wash the rhubarb and strawberries and then cut into small pieces.

Place in a pan with the sugar, vanilla and lime juice and heat up.

Simmer until enough juice has been released to cover the fruit.

Stir the starch into a little water and then stir into the hot fruit compote and bring to the boil briefly.

Season the compote to taste and then bottle as required.
