Sweet potato feta spinach roll

Description
This delicious filled roll is a great option as finger food for your next party, snack or appetiser. Not only do they look great, but they are also super tasty on the inside. The sweet potato vegetable strips are filled with the spinach and feta mixture in a similar way to sushi. As soon as you bite into them, the flavours meld and unfold an explosive taste experience on your tongue. You shouldn't miss these delicious rolls!

0.5 garlic clove
200 g spinach leaves
20 ml white wine
50 ml cream
salt, pepper, nutmeg
2 Tablespoon(s) breadcrumbs
2 sweet potatoes
1 Packet(s) feta
2 Tablespoon(s) pumpkin seeds, roasted
2 Tablespoon(s) olive oil

Preparation

Prepare the sweet potato roll

Finely chop the onion and garlic and sauté in butter until translucent.

Add the leaf spinach (frozen or fresh) and deglaze with white wine. Then add the cream and reduce a little.

Add the breadcrumbs and season with salt, pepper and nutmeg. Then leave to cool slightly.

Cut the feta into sticks (about 1 cm thick) and cut the sweet potato into vegetable strips with the Catto.

Cut the vegetable strips into pieces about 10-15cm long and cover with spinach about 5mm thick. Then place a piece of feta cheese on top and roll up (similar to a sushi roll). Make sure that a piece of the vegetable sheet overlaps to be able to close the roll well.

Brush each roll with a little olive oil and sprinkle with chopped pumpkin seeds (and the finely chopped leftover feta). Then bake in the oven at 180°C convection oven for 10 minutes and serve directly.
