This light dish is really versatile! The wafer-thin tomato slices with radish, lamb's lettuce, topped with a spicy marinade are a delight at any time of day. Whether for breakfast, brunch, as a snack in between, starter or dessert - it's delicious and light, who can resist?

For the carpaccio

2 tomatoes, large (and colourful)
1 (melon) radish
20 ml vinegar
40 ml olive oil
30 g lamb's lettuce
salt, pepper, sugar to taste

Preparation

Prepare the carpaccio

Cut the tomatoes and radish into 1.5 mm thick slices using a multi-grater.

Place the largest tomato slices on a plate and purée the remaining tomato slices with vinegar, oil and spices to make a marinade.

Spread the marinade on the tomato carpaccio. Arrange the radish and lamb's lettuce on top and season lightly with salt, pepper and sugar if necessary.
