water, salt and mirin according to the sushi rice recipe
2 radish

1 avocado
6 eggs
2 Tablespoon(s) mirin
1 Tablespoon(s) soy sauce
1 Tablespoon(s) sugar
1 Teaspoon(s) starch
1 Pinch(es) salt

Prepare the vegetable sushi

Note: The amount of sushi you can make from vegetables depends greatly on the size and shape of the vegetables - so it is difficult to formulate an exact recipe.

Prepare the sushi rice according to the instructions or your own recipe.

Meanwhile, make the tamago: Whisk together the eggs, mirin, sugar, soy sauce, starch and salt. Cover the bottom of a preheated pan with the egg mixture and allow the egg to set until it is no longer shiny. Now fold this thin egg pancake over repeatedly from one side to form a flat roll about 3cm wide. Remove the roll from the pan, cover the bottom of the pan with egg again and place the flat roll on one side of the pan. Now keep rolling the existing roll into the new egg pancake and repeat the whole process until the egg is used up. The result should be an elongated block of egg 1-2 cm high, 4-5 cm wide and about as long as the pan is wide. Leave the tamago to cool slightly afterwards.

Cut the radish into vegetable strips with the Catto. Also cut avocado into pieces, cucumber and carrot into sticks and the tamago into strips.

Cover a piece of radish (about 10cm long) with sushi rice. Then place the tamago, avocado, cucumber and carrot on top of the rice and roll everything up into a roll. Make sure that a piece is left free at the end of the radish strip, which overlaps and thus closes the roll.
