glass noodles

cucumber

carrots, thick

papaya

prawns

Preparation
Prepare the dressing

Toast the sesame seeds in a pan without fat.

Finely chop the coriander, garlic and chilli. Mix the soy sauce, fish sauce, oil and the juice and zest of 2 limes to make the dressing.

Add the sesame seeds and the garlic-chilli mixture and leave to stand for at least 10 minutes.
Prepare the salad

Prepare the glass noodles according to the instructions. Then drain well.

Peel the cucumber, carrots and papaya if necessary and cut into spaghetti with a spiral slicer. Marinate everything, including the glass noodles, with the dressing and leave to marinate again for at least 10 minutes.

Finely chop the garlic and chilli. Fry the prawns in hot sesame oil and add the chilli and garlic just before finishing.

Arrange the salad on a plate or in a bowl and garnish with the prawns.
