Burritos are a great thing! True to the motto: "fill - roll - done!" they are super-easy to prepare. They are also versatile in the filling and taste great both hot and cold. Our version contains lots of fresh ingredients and healthy vegetables. Everything together is not only really delicious, but also incredibly filling. The burrito is quick to make and perfect to take with you. An ideal snack for on the go!

Preparation
Prepare the burritos

Finely chop the carrot and onion. Sauté in a little oil and then add the curry, garlic, cumin and pepper.

Fill up with water and canned tomatoes, add cocoa and stock powder and add the rice. Cook until done, stirring regularly.

Cut courgette into vegetable spaghetti and drain corn and add both. Slice the tomatoes and wash the lettuce.

Warm the wraps slightly. Spread with crème fraîche and sprinkle with cheese if desired. Place a few lettuce leaves and tomato slices on top and top with a portion of tomato rice. Then roll up the wrap and serve or stow away for transport.
