Preparation
Prepare the salad

Cut the carrot and persimmon into spaghetti using a spiral slicer.

Mix the vegan yoghurt with tahini and maple syrup and season with a pinch of salt.

Mix the carrots and persimmons together and pour the tahini yoghurt over the top. Garnish with some freshly ground pepper and a few sesame seeds.
