Carrot pasta with carrot green pesto

Pesto: That literally screams for pasta. And there is pasta, but not the usual pasta dough, but a gluten-free vegetable version - in the form of spirals made from carrots. Add some feta and you have a delicious and quick meal on the table. If you don't want to eat animal-based foods, you can of course replace the feta with a vegan alternative.

4 Karotten
30 g carrot green
5 g ginger
10 ml lemon juice
30 g pine nuts
30 ml olive oil
salt, pepper, sugar to taste
50 g feta (or vegan alternative) (optional)

Prepare the carrot pasta

In a multichopper, blend carrot greens, pine nuts, oil, salt, ginger and lemon juice to a pesto. Crumble in the feta. Cut the carrots into spaghetti using a spiral slicer.

Fry the carrots in a little fat and season with a pinch of salt and a little sugar. Arrange on a plate and garnish with pesto and feta.
