2 chicken drumsticks
0.3 celeriac
2 carrots
2 onions
1 Teaspoon(s) mustard seeds
1 Teaspoon(s) juniper berries
1 Teaspoon(s) peppercorns
2 bay leaves
1.5 l water
salt
soy sauce, Tabasco, ... to taste
2 Tablespoon(s) fresh herbs, chopped

Prepare the broth

Cut vegetable noodles from a small part of the carrot and part of the celery and refrigerate.

Cut the carrot, celery and onion and coarsely dice and place in a saucepan with the mustard seeds, bay leaves, juniper berries, peppercorns and the chicken drumsticks. Then fill with cold water until everything is sufficiently covered.

Slowly heat the stock mixture. After about 1.5 hours, remove the chicken legs from the broth, allow to cool briefly and carefully pick the meat off the bones. Return the bones and skin to the stock and continue to simmer.

Now season the broth with salt and, if necessary, pepper and, if you like, with soy sauce, Tabasco or other spices. Then pass through a fine sieve.

Finally, heat the stock, add the vegetable noodles to cook for a few minutes, add the plucked chicken and finish with freshly chopped herbs and serve.
