Description
Everything looks so tempting in a bakery. The sight of the delicious baked goods makes your mouth water. If only it weren't for your gluten allergy... But who says you can't bake such crispy pastries without gluten? This great recipe makes it possible! We call it a "fitness roll" for good reason, because the valuable ingredients provide a good portion of energy.

Preparation
Bake the fitness rolls

Preheat the oven to 170°C convection oven. Beat the egg whites with the salt until stiff.

Mix the almond flour, ground hazelnuts, psyllium husks and baking powder and add to the beaten egg whites. Bring the water to the boil.

Add the linseed and oat flakes to the egg white mixture and let the boiling water run into the dough while stirring. Then leave to rest for 15 minutes.

Now divide the dough into four pieces, form each into a long roll and place each into a hollow of the baguette mat.

Bake the rolls for 60 minutes and leave to cool for at least 15 minutes.
