Macarons are one of the prettiest pastries there are. The colourful meringue pieces with the delicate cream filling are not only visually but also tastefully a real temptation. Especially when they are handmade, you can see the dedication and attention to detail that goes into them. For the macarons

120 g almonds, ground
150 g icing sugar
2 egg whites
1 Pinch(es) salt
2 Teaspoon(s) sugar

Prepare the macarons

Finely chop/grind the almonds with the icing sugar and pass through a sieve.

Beat the egg whites with the salt and sugar until stiff and colour as desired. Tip: The egg whites are easier to work with if they are already a few days old (and have been stored in a cool place, of course).

Fold the icing sugar and almond mixture into the beaten egg whites by the spoonful. The mixture should have a creamy and elastic texture.

Pipe the macaron mixture evenly onto the macaron baking mat using a perforated nozzle. The circles on the mat should not be filled completely, as the mixture will still run slightly.

Preheat the oven to 80°C. Meanwhile, leave the surface of the macarons to dry for 30 minutes.

Bake the macarons in the oven for 20 minutes until they have a dry surface.
