Orange mayonnaise

Description
How do you turn a simple mayonnaise into a star? When you make it fresh and refine it! This recipe combines a creamy texture with the fruity sweetness of orange juice. An absolute delight as a dip, for sandwishes, fries and of course for a nice juicy burger!

Ingredients for

For the mayonnaise

1 egg yolk
200 ml orange juice
0.5 Teaspoon(s) salt
1 Pinch(es) sugar
1 Pinch(es) pepper
1 Splash(es) lemon juice
1 Splash(es) Tabasco
300 ml oil

Preparation

  • Total time: 30 min

Prepare the mayonnaise

Reduce the orange juice to 30 ml.

Put the egg yolks and all the liquids (except oil/fat) into a litre measure.

Blend the mixture with the hand blender, continue to blend and then very slowly pour oil into the container in a fine stream.

Interrupt the pouring in every now and then to give the mixture time to combine.

Always add just enough oil so that no greasy spots form on the surface. Mix everything well with the hand blender.

After a short time, the mixture will have the consistency of a salad dressing, then it will slowly turn into mayonnaise. Add more or less oil depending on the desired consistency. If necessary, add a little liquid. Finally, season the mayonnaise to taste.

Important: This mayonnaise is made from raw egg yolks. Please only use fresh organic eggs or already pasteurised egg yolks and only use the mayonnaise on the same day.
