400 g potatoes
200 g onions
2 Tablespoon(s) olive oil
4 eggs
salt, pepper, chili to taste

Prepare the tortilla

Peel the potatoes and cut with a fine spaghetti blade.

Peel the onions as well and spiralise them like the potatoes.

Fry the vegetable spaghetti together with the oil in a non-stick pan over a medium heat for 10 minutes and season with salt and pepper. Preheat the oven to 175°C convection.

Beat the eggs.

Place the cooked potato and onion spaghetti in a springform pan, spread the egg mixture evenly over the top and bake for 15 minutes.

Tip: The egg mixture can also be whisked with crumbled feta cheese, chopped black olives, some chopped parsley and much more. After baking, it can also be served cold.
