This is an absolute dazzler dish. In the positive sense. Even the name sounds great: pumpkin with salmon. It's super quick and can be prepared in just a few easy steps. In this recipe you use a butternut squash. The pumpkin spaghetti made with the spiral slicer looks simply scrumptious. And they are. With their buttery flavour, they accentuate the delicious salmon!

For the pasta

150 g salmon, in cubes
250 g butternut pumpkin
1 spring onion
6 cherry tomatoes
1 red onion
2 Tablespoon(s) olive oil
salt, pepper to taste

Prepare the dish

Cut all the ingredients: Cut salmon into cubes, red onion into half rings and spring onion into fine rings. Halve the tomatoes and cut the pumpkin into spaghetti using a spiral slicer.

Heat the oil in a pan, sear the salmon for a few seconds and then add the onions and pumpkin.

After about a minute, add the halved cherry tomatoes. Season everything to taste, garnish with the spring onion rings and serve.
