Sweet potato noodles with spinach and feta

Description
Have you resolved to eat less meat? Then we have a nice alternative for you! The basis is sweet potatoes, which we turn into spaghetti in the spiral slicer. That's already visually impressive! Add spinach, whose mild, slightly bitter taste harmonises perfectly with the sweet note of the potato. Now all that's missing is a good dash of flavour. The feta takes care of that with its creamy consistency and slightly salty spiciness. This combination tastes really delicious! You should give it a try!

Preparation
Prepare the vegetable noodles

Finely dice the onion and cut the sweet potato into spaghetti using a spiral slicer. Crumble feta into small pieces.

Sweat onions in a little oil, add sweet potato spaghetti and spinach and sweat everything a little.

Deglaze with the vegetable stock, simmer for a few moments and then add the feta. Season to taste with salt, a little pepper and chilli, if using, and serve.
