For the dough

10 g yeast, fresh
320 ml water
2 Teaspoon(s) sugar
1 Teaspoon(s) salt
300 g gluten-free flour mix
40 g corn starch (plus a little more for kneading)
35 ml linseed oil

Preparation

  • Total time: 3 h

Prepare the bread

Mix yeast, sugar and about 1/3 of the water and let rise for 15 minutes.

Add the remaining ingredients one by one, kneading until a smooth dough is formed. Leave the dough to rise for one hour.

Preheat the oven to 220 °C top/bottom heat. Roughly knead the dough and divide it into two equal pieces.

Shape each piece into a long flat loaf and place each in a well of the baking mat. 
TIP: Sprinkle the dough and your hands with cornflour so that not so much sticks to your hands.

Leave the loaves to rise for 30 minutes, brush with a little water and then bake at 220°C top/bottom heat for 15 minutes. Then lower the temperature to 200°C and bake for another 30 minutes.
